Heirloom Collards

These collards are not your usual "collard greens" - the ones you think you need to cook all day with a ham hock (although a little bacon is wonderful). Yellow cabbage collards lean towards tasting and cooking like cabbage ... with a tender leaf and mild flavor, sauteing these greens like kale and pairing with a clove of garlic, caramelized sweet onions, maybe a splash of vinegar gives a satisfying side dish or can be a tasty bed of greens cradling grilled pork chop.
